    Ingredients and substitutions

    Potatoes

    • Baby potatoes – you could also dice a larger potato into small pieces.
    • Olive oil – or another neutral cooking oil like avocado or canola oil.
    • Lemon juice – freshly squeezed is best but bottled will work in a pinch.
    • Dried oregano – basil would provide a similar flavour.
    • Salt & pepper – to taste.

    Greek meatballs

    • Ground chicken – you could also make these meatballs with ground turkey or ground pork.
    • Yellow onion – shallots or white onions would also be good.
    • Minced garlic – use freshly minced garlic or jarred minced garlic if it’s all you have on hand.
    • Parsley – try using more oregano or chervil instead.
    • Lemon zest – if you don’t have any lemon zest, use a bit of lemon juice.
    • Dried oregano – basil would provide a similar flavour.
    • Dried dill – tarragon tastes similar but is a bit stronger.
    • Salt & pepper – to taste.

    To serve

    • Cherry tomatoes – swap out for grape tomatoes or serve with another vegetable of your choice.
    • Cucumber – serve with zucchini or another vegetable of your choice.
    • Red onion – white onion will work but it has a much milder flavour.
    • Parsley – oregano or chervil are the best substitutes here.
    • Tzatziki – use a store-bought tzatziki for easy prep or make your own using Greek yogurt, grated cucumber, olive oil, dill, lemon juice and garlic.

    How to make Greek meatballs

    Steps 1 and 2 for making baked greek meatballs: roast potatoes and mix meatball mixture.

    Step 1: Roast the potatoes.

    Preheat oven to 425 F. Toss potatoes with olive oil, lemon juice, oregano and salt and pepper on a parchment-lined baking sheet. Bake for 20 minutes.

    Step 2: Make the meatball mixture.

    While potatoes are cooking, mix ground chicken in a large bowl with grated onion, garlic, parsley, lemon zest, oregano, dill and salt & pepper.

    Steps 3 and 4 for making baked greek meatballs: form meatballs then bake with potatoes.

    Step 3: Roll the meatballs.

    Roll meat mixture into meatballs, placing on a cutting board then adding to baking sheet with potatoes once the potatoes have cooked for 20 minutes.

    Step 4: Bake the meatballs and potatoes.

    Bake meatballs and potatoes another 20 minutes.

    Steps 5 and 6 for making greek chicken meatballs: assemble side veggies then serve everything together with tzatziki.

    While that's cooking, prep cherry tomatoes, cucumber and red onion, tossing with parsley and a little bit of olive oil and salt & pepper to taste.

    Why are my chicken meatballs mushy?

    There are a few things you’ll want to avoid to ensure your chicken meatballs don’t turn out mushy. Make sure you don’t overhandle the meatballs when rolling them, or they’ll turn out mushy and risk breaking apart easily. You also want to make sure you don’t roll them too tight! Since this recipe doesn’t include egg or breadcrumbs, they should turn out nice and firm.

    Do you have to brown them before cooking them?

    There’s no need to brown these Greek chicken meatballs before cooking them. After you’ve finished rolling them, place them on the tray with the potatoes and bake them for 20 minutes.

    Storing and reheating

    These Greek chicken meatballs are great for meal prep! After they’ve completely cooled, transfer them to glass bowls or meal prep containers with the potatoes for up to 5 days. They’re great for work lunches or quick dinners throughout the week.

    When you’re ready to enjoy, all you have to do is pull a container out of the fridge then eat them cold or microwave them for 1 to 2 minutes until heated through.

    Can you freeze meatballs?

    This chicken meatball recipe is definitely freezer-friendly. Flash freeze the meatballs on a tray in the freezer so they don’t stick together, then transfer them to a freezer-safe Ziploc bag or glass container. They should last in the freezer for up to 3 months.

    You can reheat them directly from frozen in the microwave for 3 to 4 minutes until heated through or let them defrost in the fridge overnight then reheat as normal. Serve with fresh potatoes, salad and tzatziki and dig in!

    You could also try making your Greek meatballs with ground turkey or pork.
    Store the leftovers in the fridge for up to 5 days. Eat them cold or reheat in the microwave for 1-2 minutes.
