Ingredients:
- 2 large cucumbers
- 2 peppers of choice
- 1 t lime zest
- 2 oz mint
- 2 oz dill
- 3oz brebis cheese
- 2 oz dijon
- 7 oz champagne vinegar
- 16 oz XVOO
- 3 oz honey
- Salt + Pepper to taste
- 2 oz basil
- 2 oz thyme
- 1 T garlic
Blend vinegar, honey, mustard, basil, thyme, brebis, garlic
Slowly add in XVOO and season with salt and pepper
Cut cucumbers lengthwise removing the seeds and cutting at an angle
Cut peppers at an angle removing the seeds
Chop basil and mint and add to bowl with cucumbers and peppers
Pour vinaigrette over the cucumbers and serve with brebis and lime zest to top the salad
optional: replace brebis with feta cheese
