Brunch in a Rush

Today I am photographing a wedding and even though the lovely bride and groom are going to feed me later I need to eat something before I go. Checking all the equipment is ready and good to go, can be quite time consuming. This is what I put together today and it was lovely and fresh.

  • A Boiled Egg
  • Vine Ripened Cherry Tomatoes
  • Mozzarella
  • Cucumber
  • Home made Keto Mayonnaise
  • Pepper
  • Smoked Paprika

Boil the egg for 5 minutes before popping in cold water. Then peel the egg and leave to cool.

Prepare the rest of the dish. Chop the cucumber, quickly wash the cherry tomatoes, slice the mozzarella and when the egg is cool cut in half and add a dollop of mayonnaise to both eggs and finish with smoked paprika on the mayo and pepper on the tomatoes.

Voila !! Done – Now to Eat x

Preparing eggs in advance is good and if you are a Pickled Egg fan then boiling a dozen and popping in white vinegar is a good shout. Use a jar that seals like a Kilner Jar .
