Day 17: Old Faithful Victoria Sponge Recipe

Another sunny Sunday, and whilst dinner isn’t too exciting today, we have been busy making a classic teatime treat: a Victoria Sponge. 🍰 Scroll down for the scarily easy recipe!

Breakfast: Scrambled Eggs and Baked Beans on Seeded Toast

Old Faithful Victoria Sponge Recipe

Serves 8-12 (makes 1 large cake)

Who doesn’t love a Victoria Sponge?!

Ingredients:
• 250g caster sugar
• 250g unsalted butter, at room temperature
• 250g self-raising flour
• 4 large eggs
• 1tsp baking powder
• 1tsp vanilla extract
For the filling:
• 75g icing sugar
• 25g unsalted butter
• a drop of milk
• a drop of vanilla extract
• jam (strawberry or raspberry)

Method:
1) Pre-heat the oven to 175°c, and grease 2 x 25cm round cake tins, or something similar in size.
2) In a large mixing bowl, combine the soft butter and caster sugar until smooth.
3) Add one egg in to the butter & sugar, mix together, add around 1/5th of the flour, mix together, and repeat until all of the flour and eggs are in the bowl.
4) Add the baking powder and vanilla extract and give the batter a good mix. If it seems very thick, add a tsp or two of milk. You want a batter that is loose enough for your to spread it in the tin, but not at all runny. Think Greek Yoghurt!
5) Divide the mix between the two greased cake tins and gently smooth out to ensure it covers the whole tin.
6) Bake for 25 minutes, or until the sponge is starting to brown, and is springy to touch.
7) Leave to cool slightly in the tin, then transfer to a wire cooling rack to cool completely.
8) Once cool, combine the icing sugar, butter & vanilla extract. If the mixture is too firm, add a drop of milk. You want a soft, creamy texture that’s easy to spread.
9) Spread the buttercream you’ve just made on top of one of the sponges, then spread the jam on the other.
10) Sandwich the two sponges together, dust the top with icing sugar if you fancy, and you’re ready to serve! Enjoy!
