DIY Poke Bowls

GF. DF. Plant based option.

There aren’t many meals I love more than this. Not only is it so delicious, once you prep all the ingredients, it is so simple to assemble these delicious bowls and you can easily mix and match ingredients with your preferences or what is left in the fridge. Who would have thought healthy food could be so tasty? It is meals like this that really help people embrace a healthy diet and want to continue it for the long term!

Ingredients:

Teriyaki Salmon/tofu:

  • 2 fillets, diced into 3-4cm pieces or 300g diced tofu
  • 1 Tbsp tamari/soy sauce
  • 1 tsp maple syrup
  • 1 Tbsp apple cider vinegar
  • 3cm knob fresh ginger, grated
  • Olive oil

Tahini sauce:

  • 2 tsp hulled tahini
  • 1 tsp tamari/soy sauce
  • 1 tsp apple cider vinegar
  • 1 Tbsp water (or more depending how runny you like it)

Remaining ingredients:

  • 3/4 cup brown rice
  • Pinch of seasalt
  • 1 nori sheet plus extra to top
  • 1 small cucumber, diced
  • 1 large carrot, peeled into ribbons
  • 1 1/2 cups edamame beans
  • 3 radish, finely sliced
  • 1 avocado, diced
  • Kimchi
  • Sesame seeds

 

  1. Firstly, I like to start by preparing cucumber, carrot, radish, avocado, kimchi & sesame into little bowls to make assembly easy.
  2. Next, preheat the oven to 180 degrees celsius. Then rinse the rice in a colander and add to a small saucepan. Cover with water and salt and cook as per packet instructions. Once cooked through, stir in shredded nori and set aside.
  3. Meanwhile, to make the teriyaki sauce, combine the tamari, ACV, maple & ginger into a dish. Then add the salmon or tofu and coat with the sauce. Set aside
  4. Line a medium baking tray and add the salmon or tofu pieces to the tray. Bake for 15 minutes or until cooked through but still slightly soft.
  5. To make the tahini sauce, add all ingredients to a small bowl and stir until emulsified. Add small dashes extra to make it more runny and easy to drizzle. Set aside.
  6. Lastly, boil 2 cups of water in a small saucepan. Add the frozen edamame beans for 2 minutes and then drain.
  7. Assemble bowls as you please, drizzle over tahini sauce and top with sesame seeds & kimchi! Enjoy :)
