I eat salads for dinner a lot! I like to prep ~4 at a time if I’m getting everything out to chop anyway. This easy greek salad is one of my favorites!
Each salad:
2-3 oz grilled chicken (we grill a lot at a time and I chop and freeze)
greens of your choice (I use the 50/50 spring mix w/spinach)
2 oz chopped cherry tomatoes
1/4 cucumber, peeled (optional) and chopped
red onion (I pickle them so they don’t upset my stomach)
1 oz crumbled feta
chopped kalamata olives
Light Greek dressing
Optional – pine nuts, chickpeas, quinoa or farro…
I have heard people say they don’t like salad, or see salad as punishment – I truly love them and when I find a good one and know I have it prepped for dinner, I look forward to it! Are you pro-salad, yes or no? 🥗❤️
