This mixed raspberry, blackberry, and blueberry gazpacho dessert recipe with orange juice and fresh mint is light, tangy, and healthy.  Add whatever berries you have on hand, chill, and add a dollop of fresh whipped cream.

I prefer this recipe chunky.  If you want it smooth, throw it all in a blender.  If you like smooth and chunky, then just throw half of it into the blender.

Ingredients

  • 1lb mixed berries (~ 3 cups) - blueberries, raspberries, blackberries
  • 1 Tbsp brown sugar
  • 1/4 tsp vanilla extract
  • 1 tsp e.v olive oil
  • 1 Tbsp orange zest
  • 1 1/2 Tbsp orange juice
  • 2 Tbsp fresh mint, chiffonade
  • pinch salt

Instructions

  • Mix all ingredients in a bowl, leaving a little zest and mint for garnish.  Chill if you have the time for around 45 minutes.  Add salt to taste.  Happy Eating!  Beckie
