Ingredients
- 1lb mixed berries (~ 3 cups) - blueberries, raspberries, blackberries
- 1 Tbsp brown sugar
- 1/4 tsp vanilla extract
- 1 tsp e.v olive oil
- 1 Tbsp orange zest
- 1 1/2 Tbsp orange juice
- 2 Tbsp fresh mint, chiffonade
- pinch salt
Instructions
- Mix all ingredients in a bowl, leaving a little zest and mint for garnish. Chill if you have the time for around 45 minutes. Add salt to taste. Happy Eating! Beckie
