Grilled Jamaican Jerk Chicken

Spice it up island style with this grilled Caribbean inspired "jerk" chicken recipe that is marinated in onions, garlic, ginger, Jalapeno, all spice, brown sugar, paprika, thyme, soy sauce and lime juice.

If you don't have a grill - pre-heat oven to 400F and cook uncovered ~ 30-40 minutes or until internal temperature of chicken reaches 165F and juices run clear.

Take up your skills another notch and reduce the marinade liquid left in the pan or the bowl in a pan on the stovetop for 5-8 minutes or until thickened and spoon over your cooked chicken.

This marinade recipe can be cooked with chicken, fish, tempeh, or vegetables.    Serve over salad, with black beans and rice, and/or with a pineapple or mango chutney.

Ingredients

  • 8 (~2 lbs) chicken thighs, boneless & skinless
  • 2/3 cup onions, diced
  • 2 tsp garlic, minced
  • 2 tsp ginger, zested
  • 1 Tbsp Jalapeno, minced
  • 1/2 tsp ground all spice
  • 1/2 tsp ground black pepper
  • 3 Tbsp brown sugar
  • 1 tsp ground paprika
  • 1 1/2 tsp dried thyme leaves
  • 2 Tbsp water
  • 3 1/2 Tbsp fresh lime juice
  • 2 Tbsp soy sauce / tamari - regular or gluten free
  • 1/2 tsp salt

Instructions

  • Bring a grill to medium heat (~400F).
  • Make Marinade.  Add all ingredients to a food processor and whiz it up.  Marinate chicken for at least 30 minutes and up to 24 hours.
  • Grill covered for ~ 6-7 minutes per side or until internal temperature of chicken reaches 165F and juices run clear.  Baste reserved marinade over chicken a couple times but stop 5-8 minutes before taking off the grill.
