Ah, tomato cucumber salad, a classic side to nearly all summer grilling. It so iconic, refreshing and rejuvenating on a hot summer day. Perfect for picnics or a quick snack.
Its it time for this classic to get a makeover!

Herbaceous Tomato Cucumber Salad (serves 4-5)
- 1 quart Grape Tomatoes, halved or 1 lb heirloom tomatoes, quartered, cored and roughly chopped
- 2 large Seedless Cucumbers, cut in half, then quartered lengthwise, cut quarters into 1/4 inch slices
- 1 medium Red Onion, Quartered and thinly sliced
- 1 large bunch of Dill, long stems removed, then chopped
- 1 large bunch of Mint, long stems removed, then chopped
- 1 large bunch of Flat Leaf Parsley
- 1 large Lemon, zested and juiced
- 2 Tbsp Extra Virgin Olive Oil, I prefer Greek First Press
- 1/2 tsp Black Pepper, ground
- 1 tsp Salt
- 1/2 tsp or more to taste, Crushed Red Pepper Flakes (optional)
- 2 cloves Garlic, pressed (optional)
Lets get it together!
- in a small bowl, combine Lemon Zest, Lemon Juice, Extra Virgin Olive Oil, Salt, Pepper, Crushed Red Pepper and Garlic, if using. Whisk to blend.
- Take remaining ingredients and prepare as outlined above, into a large bowl. Top with dressing and mix.
