Herbaceous Tomato Cucumber Salad

Ah, tomato cucumber salad, a classic side to nearly all summer grilling. It so iconic, refreshing and rejuvenating on a hot summer day. Perfect for picnics or a quick snack.

Its it time for this classic to get a makeover!

Herbaceous Tomato Cucumber Salad (serves 4-5)

  • 1 quart Grape Tomatoes, halved or 1 lb heirloom tomatoes, quartered, cored and roughly chopped
  • 2 large Seedless Cucumbers, cut in half, then quartered lengthwise, cut quarters into 1/4 inch slices
  • 1 medium Red Onion, Quartered and thinly sliced
  • 1 large bunch of Dill, long stems removed, then chopped
  • 1 large bunch of Mint, long stems removed, then chopped
  • 1 large bunch of Flat Leaf Parsley
  • 1 large Lemon, zested and juiced
  • 2 Tbsp Extra Virgin Olive Oil, I prefer Greek First Press
  • 1/2 tsp Black Pepper, ground
  • 1 tsp Salt
  • 1/2 tsp or more to taste, Crushed Red Pepper Flakes (optional)
  • 2 cloves Garlic, pressed (optional)

Lets get it together!

  1. in a small bowl, combine Lemon Zest, Lemon Juice, Extra Virgin Olive Oil, Salt, Pepper, Crushed Red Pepper and Garlic, if using. Whisk to blend.
  2. Take remaining ingredients and prepare as outlined above, into a large bowl. Top with dressing and mix.
