I’ve always been iffy on beets. They can be good, but they have to be made right.
I decided to give them my first try, in the instant pot!
Start by washing off the beets, and cutting off the ends/stems.
Put the trivet in the bottom of the instant pot, then put the beets on it. Pour about a cup of water over them.
Close your pot, press pressure cook.
If you like your beets soft, and ready to slice:
If you have large beets, I recommend about 15-20 minutes depending how many and how big.
If you have fairly small beets 10-15 should do it.
If you have a mix (which I had! A super tiny one and some huge ones) try 15 minutes. My small one was softer but they were all well cooked and worked great.
Let them natural release.
Pull the beets out, I cut off the skins and diced them up.
I put them in a Buddha bowl with some rice, cucumber, tofu, sesame seeds, olive oil, and some spices. Super yummy and the beets were a great addition to change it up a bit!
My 4 year old son was quite amused by the bright pink color of the water, my hands, and everything else they touched so that was a bonus and he was excited to try them too!
