A delicious way to up your greens, this healthy guacamole is also a great skin food!
Ingredients:
1 ripe but firm avocado, peeled and chopped into chunks
1 tomato, chopped into small chunks
4 spring onions, finely sliced
1/2 red onion, peeled and finely chopped
1/2 a small cucumber, peeled and finely chopped
2 tablespoons moringa powder
1 small green or red chilli, seeds removed and finely chopped
Himalayan salt to taste
Juice of one lemon
Method:
Mix all the ingredients together in a bowl
Add the salt to taste and mash the mix with a fork until the avocado has blended with the rest of the ingredients completely
Refrigerate for 30min and remove from fridge just before serving
Serves 4 as a side or topping
Serve with corn chips (or plantain chips for grain free), on burgers, in a salad wrap or as a side to falafel balls
