This was by far one of the favorites this week. Everyone enjoyed multiple bowls, even my kids! Each serving is 4 points!
- Ingredients
Crab mix
• 1 lb. of imitation crab meat
• 1 tbsp. light mayo
• 1tsp soy sauce
• 1 tsp sriracha
• 1 cup fat free cream cheese -
For the bowls
• 1 cup jasmine rice cooked
• 2 cup cauliflower rice cooked
• 2 tsp wine vinegar
• 1 tsp soy sauce
• Diced cucumber
• Edamame
• Shredded carrots
• Avocado diced
• Sriracha mayo
- Instructions
1. Mix crab ingredients and set aside
2. Mix rice, cauliflower rice, vinegar, and soy sauce.
3. Serve bowls with rice mix, topped with crab mix and other toppings
4. Enjoy!
