Sorry, I’m not sorry for posting back to back cold composed salad recipes – it’s summer and I am taking advantage of summer cooking to the fullest! And why does everything taste better in a bowl? Kidding (maybe), but I am fond of these new bowls I just got. Maybe next week I will try for a recipe that works better on plate!
This week was the second week for me back at work and truthfully, it was a “throw together lunch every day” kind of week. Luckily, I’m usually stocked on fruits and most importantly cucumbers and feta so I sort of whipped this up first thing on Monday. It’s a light, refreshing and VERY surprisingly filling dish that keeps your family wanting more after each bite!
Watermelon Cucumber Feta Salad
For your ingredients:
- 3 Cups Sliced Watermelon, Cubed
- 1/2 English Cucumber
- 2 TBSP Feta
- 2 TBSP Red Wine Vinegar
- 2 TSP Table Salt
Total Prep Time: 30 Minutes
- Take your half of cucumber, half longways and slice into skinny slices.
- Add your red wine vinegar and salt to the cucumber and let sit for ~20 minutes.
- Drain the vinegar off the cucumber almost entirely then add your watermelon. Mix well.
- Top with feta.
Yields 4 servings per batch above. Estimated Weight Watchers Points: 1sp per serving
It really doesn’t get much easier than this folks which as you know, I love easy and impressive dishes! Now get to chopping!
